½ cup seeded datil peppers, finely diced
1 medium onion, finely diced
1 medium bell pepper, finely diced
2 cloves garlic
1 pint apple cider vinegar
1 pint ketchup ~48 oz.
3 tbsp sugar
1 tsp salt
Stir everything together and cook on a very low heat to reduce the liquid and make it more relishy. It will reduce by ½-⅓ when it’s thick enough.
